Bananas, bananas, bananas....oh yeah! And strawberries


Banana bread is sort of like our friend, the cheesecake, one main ingredient with the possibility of so many varieties. Two weeks ago, I made this strawberry banana bread, for some friends and I, while we brunched. YES! I brunch in past tense. Since we are getting to know one another, let me just put it on the table, I am a 'Creating My Own Words Connoisseur....Hahaha! Maybe, I should have my own dictionary.


Ok, back to business. It's crazy how a person can be so turned off by a banana on its own, but give them a slice of banana bread and it's a day in paradise. That's me, I love a good slice, but give me a banana or banana flavoured drink, and I yack. That's why this banana bread is a bundle full of fun. Strawberries and banana mix, makes for a great tropical getaway in a baked good, while sitting on the couch watching Netflix. I know my Taysties love a good Netflix and snack. Ingredients:

▪︎ 3 to 4 ripe bananas

▪︎ 1 c. Sugar (white)

▪︎ 1 Tspn baking powder

▪︎ 1 Tspn baking soda

▪︎ 1 Tspn salt

▪︎ 2 eggs

▪︎ 2 c. All purpose flour

▪︎ 1 c. Strawberries, diced


Instructions:

▪︎ Preheat oven to 350°

▪︎ In a mixing bowl, place flour, baking powder, baking soda and salt (dry ingredients) and mix

▪︎ In another bowl, place bananas (mashed), along with eggs, sugar and mix.

▪︎ When fully blended, add dry ingredients to we ingredients. Adding half then mixing, then adding the remainder.

▪︎ Once fully mixed, pour mixture into a bread dish and place in oven for approx. 40 or until browned. Be sure not to overtake, checking in at the 30 minute mark.


NOTES: Best to add parchment paper to the baking dish, to assist with easy transfer.
