Who ever thought pancake cereal? This innovative bowl of cereal, has gone viral over the last week, on social media. So, of course, I had to try it. Whoever thought this up, needs a Grammy in food innovation. People often view food, as something so simple, merely because, it is made to consume and it's effect visually is temporary. But, my oh my, are they wrong. Food is so vast and, in it, lies great possibility, with taste and visual, respectively.
This morning, I helped myself to a bowl myself and to my surprise, it was delicious. You might think, it's just a pancake, though. And the answer is, yes, it is. But, in its defence, it is tastebud blaster, with a mouthful of exploding flavours, mixed with berries delight and syrup of any flavour. I'm not sure if it was simply because the whole idea excites me, but I am definitely loving this one. Try it! I dare you and let me know your thoughts.
Ingredients:
▪︎ 2 1/2 c. All purpose flour
▪︎ 1 1/2 c. Milk
▪︎ 2 eggs
▪︎ 2 tspn sugar
▪︎ 1 tspn baking powder
▪︎ 1 tspn baking soda
▪︎ 1/2 c. Blueberries
▪︎ 4 large strawberries, chopped
▪︎ 1/2 c. Syrup
Instructions:
▪︎ In a glass or steel mixing bowl, pour in flour, milk, sugar, baking powder, baking soda and eggs
▪︎ Mix thoroughly, ensuring all chunks of flour are no longer in mixture (we don't want it too thin or too thick)
▪︎ Texture of batter should be of a creamy substance, that when lifting, it falls off spoon
▪︎ Warm up countertop/stovetop griddle on medium heat
▪︎ Transfer batter into a squeeze bottle (makes for easier application onto griddle)
▪︎ Squeeze batter onto griddle, aprrox. 23 mm in diameter (equivalent to the size of a quarter)
▪︎ Cook on each size for approx. 1 minute or until golden brown. Repeat with remaining batter
▪︎ Place the minis into a bowl, top with strawberries and blueberries and pour over with syrup
