It's Sunday, May 10, 2020. How are we spending Mother's Day? Still in isolation. But not because we are in isolation means, we can't celebrate and eat good food. This morning, was an early one. Woke up bright and early, headed to the nearest grocery store and picked up everything tasty. Got smoked ham, breakfast sausages, eggs and cheese. Figured if we can't sit at School Resto, for breakfast, I'll bring School Resto to us, happily and safely, at home.
Decided to make this delicious 'Cheesy Egg Roll Omelette' for my mom. Stuffed with ham, roast beef, green onions and cheese, which definitely made this, one for the books. Paired with sausage, toast and tomatoes, on the side, a perfect in-house restaurant made, at my fingertips. So, if you're looking for fun, fast and easy meals, and you want to dine inside, as if you were dining out, try this. Trust me, you'll thank me later.
Ingredients:
▪︎ 12 large eggs
▪︎ 1 1/2 c. Cheddar cheese
▪︎ 100 g smoked ham
▪︎ 100 g roast beef
▪︎ 3/4 c. Milk
▪︎ 1 tbspn salt
▪︎ 2 tspn all purpose flower
▪︎ 2 tbspn garlic/onion powder
▪︎ Parsley
▪︎ 2 tbspn mustard
Instructions:
Egg Mixture:
▪︎ Preheat oven to 370°
▪︎ Crack eggs into a glass or stainless steel mixing boil.
▪︎ Add milk and seasonings; onion powder, garlic powder and salt. Whisk together, then add the flour to mixture
▪︎ In a glass baking dish (lasagna dish), place parchment paper, ensuring it folds into the grooves, so as to not leak below the paper (optional)
▪︎ Pour entire mix into dish and place into oven to 20 to 25 minutes
Meats & Cheese:
▪︎ Chop ham and beef into pieces
▪︎ Grab your food processor, and put in ham and beef. Do not turn continuous spin, rather pulse meats, until finely chopped
▪︎ Chop onions
▪︎ Grater cheese with with a regular handheld grater. Place everything to the side, while eggs finish baking
Roll:
▪︎ This needs to be done while hot
▪︎ Remove from oven, place dish onto a surface, that will not tarnish by heat. Preferably a cutting surface
▪︎ Transfer egg to surface, by lifting parchment paper out of dish
▪︎ Spread with honey mustard, top with onions and meats, adding more cheese at the end
▪︎ Starting at the base of the roll, ensuring it is laying length wise, begin rolling away from you, making sure to unravel the parchment paper
▪︎ Garnish with more cheese on top (when rolled), add parsley and tomatoes (optional)
▪︎ The roll can be left to sit for 3 to 5 minutes, to allow cheese to melt
