Chicken & Waffles! It's a Southern Thing.

When you go to the south, what do you do? Yes, hopefully, it's July, in New Orleans, so you can pass through the Essence Fest, but no, that's not it. Okay, I'll tell you, you lock in on the best food spot, with the tastiest chicken and waffles you can find. How do I begin to tell the love story of 'The Chicken & Waffles'. There's something about a waffle, topped with a tender piece of chicken, doused in syrup, that gets the tastebuds going.

I remember the first time, I was given a plate of chicken and waffles, I thought, "Why would someone eat this". When I took my first bite, it was an immediate regret for my earlier statement. The meat was cooked to perfection, the waffles were moist, and the syrup, ohhhh, the syrup was like perfectly preserved for this occasion.

After that outing, I craved this meal, I mean, for days all I thought about was this meal. So, I decided to perfect it. Once I did, I made it for some friends and family at a girls night I threw, and it was a hit. Therefore, this has been a long time coming. I'm excited to share with you, the mouth watering recipe, that will have your friends and family wanting more.

Chicken

Ingredients:

▪︎ 5 Chicken Breast, 10 Chicken Drumsticks

▪︎ 5 c. all purpose flour

▪︎ 3/4 c. Paprika

▪︎ 3/4 c. red all purpose seasoning salt

▪︎ 1/4 c. onion powder

▪︎ Box of buttermilk

▪︎ 2 tspns baking powder

Instructions:

Seasoning the Chicken

▪ In a large steel bowl place, chicken breast and chicken drumsticks, respectively

▪︎ Throw in paprika, seasoning salt and onion powder and rub seasoning in, thoroughly

▪︎Place chicken into a large size ziplock bag

▪︎ Pour buttermilk over the chicken, making sure it is fully submerged

▪︎Seal bag and leave in fridge for 2 to 3 hours

AFTER 2 TO 3 HOURS

Frying the Chicken

▪︎Remove chicken from the fridge

▪︎In a separate bowl, pour off the excess buttermilk

▪︎ In another bowl, place flour and add seasoning; paprika, seasoning salt and.onion powder, baking power, mix.

▪︎ Dip chicken into the buttermilk, that was poured off, then put into batter and coat. Repeat with remainder of chicken. You can choose to coat one or allow them to sit on a surface 10 minutes and coat again

▪︎ Heat up oil, preferably on medium, so the chicken does not become crispy too quickly, without cooking on the inside. Repeat with remainder.

Waffles

Ingredients:

▪︎ 1 1/2 c. all purpose flour

▪︎ 1 tspn table salt

▪︎ 2 tbspns sugar

▪︎ 1 tspn baking powder

▪︎ 1 c. Milk

▪︎ 2 eggs

Instructions:

▪︎ In a steel mixing bowl, place flour, salt, milk, eggs, sugar and mix

▪︎ The batter should be of a smooth consistency. When lifted on spoon, batter should slide of, but is not water.

▪︎ Heat waffle iron. Once hot enough, fill with batter and close.

▪︎ Leave in waffle iron for 3 to 4 minutes, until golden brown. Remove. Repeat with remainder of batter.

Once the waffles are all done and the chicken has been fried, grab a Olathe, add a waffle and add the chicken on top. Top with syrup or honey and a small amount of butter. Welcome to the South!

Et Voilà! Southern Chicken & Waffles.
