OK! So, Taysties, this past Mother's Day, was food packed, even with the damper of isolation. A featured dish of deep fried shrimps, accompanied by lobster spring rolls, sirloin steak with a side salad, made the night, a perfect one, for one of our amazing queens. Mothers, they give us life, and the least we can do, is create a meal, full of love.
It was a three hour ordeal, but worth it, watching my mom enjoy every bite. The nine months of swollen feet, food aversions, mood swings and lack of sleep are worth more than a meal and a hug. But....when I can provide, for her, the one necessity we need to sustain life, I am extending my gratitude for the years, she has dedicated as a mother. To mine and all the mom's out there, you are loved, you are appreciated and your efforts never go unnoticed, on Mother's Day and the other 364 days.
Since fried shrimp was our feature dish, and mama's number one pick, of course, I'm going to share the recipe.
Ingredients:
▪ 2 bags black tiger shrimp
▪︎ 1/2 c. Onion powder
▪︎ 1/2 c. Mexican paprika
▪︎ 1/2 c. All purpose seasoning salt
▪︎ 1 c. Buttermilk
▪︎ 4 c. All purpose flour
▪︎ 4L Bottle vegetable oil
Instructions:
▪ In a mixing bowl, place both bags of shrimp. Make sure to wash thoroughly before adding seasonings.
▪︎ Shrimps should be deveined and shell removed until the base of the tail
▪︎ Add onion powder, paprika, and season salt to bowl and mix.
▪︎ Pour buttermilk overtop and allow to sit for 10 minutes.
▪︎ In another mixing or a cutting top, pour 4 cups of flour and season, as well. Again, onion powder, paprika and seasoning were used and mix.
▪︎ Preheat oil on countertop or stovetop fryer. We used a countertop fryer for this one, but stovetop can definitely work (medium heat to start)
▪︎ Once the shrimp has marinated, 4 by 4, dip in buttermilk and coat with flour
▪︎ Place shrimp into the pot/fryer and leave to fry for about a minute and half, or until golden brown and crisp on the outside.
